Cocoa Almond Butter Cookies

Prep Time: 15 min // Cook Time: 10 min // Total: 25 min // Serving: 15 cookies


Ingredients:

Dry ingredients:

  • 1 cup all-purpose flour

  • ½ cup brown sugar

  • ¼ teaspoon salt

  • ¼ teaspoon baking soda

  • 2 tablespoons cocoa powder

Wet ingredients:

  • 1 egg

  • 1/3 cup vegetable oil

  • 2/3 cup almond butter

  • ¼ teaspoon vanilla extract

Cookie decoration: Optional

  • 15 sliced almonds

    Variations:

    Add chocolate chips, chopped nuts, or mixed seeds to the cookie dough

Instructions:

  1. Pre heat oven to 350 degrees

  2. Mix dry ingredients in a bowl

  3. Mix wet ingredients in a separate bowl

  4. Pour the wet ingredients into the dry ingredient bowl and mix well to form cookie dough

  5. Place 1 ½ tablespoons of cookie dough in your hand and roll it into a ball

  6. Place cookie dough balls on a parchment paper lined cookie sheet

  7. Coat the bottom of a circular drinking glass with a small amount of vegetable oil

  8. Press the bottom of the drinking glass down on the cookie dough to make circular shaped cookies

  9. Press one slivered almond on the top of each cookie for decoration (optional)

  10. Bake at 350 degrees for 10 minutes

  11. Let cookies cool completely before serving
