Black Bean Southwestern Burger
Prep Time: 15 min // Cook Time: 10 min // Total: 25 min // Serving: 4 Patties
Ingredients:
1 can (15 ounces) black beans, rinse under cold water and pat dry
1 cup breadcrumbs
1 egg, raw
1 cup yellow onion, chopped
2 cup mushrooms, chopped
1 cup red or yellow peppers, chopped
2 tablespoons Canola oil
1 tablespoon garlic, chopped
2 tablespoons salsa
1 tablespoon cumin
1 tablespoon smoked paprika
1 teaspoon taco seasoning
Instructions:
Heat up frying pan with 1 tablespoon olive/canola oil
Suttee chopped onions, bell pepper together until soft
Add chopped mushrooms
Add taco seasoning, cumin, smoked paprika
Suttee all vegetables until they are soft and liquid has evaporated
Transfer suttee vegetables into a food processor
Add black beans and to food processor
Pulse until all ingredients mixed well together
Add bread crumb
Form the bean mixture into 4 patties
Heat up a nonstick frying pan with 1 tablespoon oil with garlic
Place bean patties on the nonstick pan
Pan fry each patty for 3-5 minutes or until the patty is brown and firm outside
Flip the patty until the other side becomes firm and brown, about another 3-5 minutes
