Broccoli Wraps

Prep Time: 20 min // Cook Time: 24 min // Total: 44 min // Serving: 4

After seeing so many spinach tortillas in grocery stores, I was inspired to create a wrap recipe with broccoli. I wanted to create a wrap that is thin and pliable so it can be versatile for many uses. After many tries, I am so excited to share my broccoli wrap recipe with you. By following my recipe, you can have these thin and delicious wraps that are perfect for making breakfast burritos, soft tacos, sandwich wraps, and even savory crepes. The flavor of these wraps is mild. This is because I wanted these wraps to complement rather than overpower the taste of the fillings. It is absolutely crucial to rest the batter for a minimum of fifteen minutes. When I tried to use the batter immediately or set the batter aside for less than fifteen minutes, the batter was too runny and it was impossible to make the wraps. On the other hand, letting the batter set longer than fifteen minutes was fine. So, fifteen minutes minimum is the key to successful wrap-making.

These wraps are a delicious and a fun twist from traditional wraps. However you use and eat these wraps, you will definitely be glad to add this wrap to your recipe collection.

  • 5 broccoli florets (~ 2 cups cut up)

  • ½ cup water

  • ½ cup whole milk

  • 1 egg

  • ½ teaspoon mixed seasoning powder (i.e., Mrs. Dash)

  • 1/8 teaspoon kosher salt

  • ½ cup flour

  • ½ teaspoon vegetable oil (for pan frying)

Instructions:

  1. Microwave broccoli florets for 3 minutes or until they are soft

  2. Put the broccoli, water, milk, egg, seasoning powder and salt in a blender and blend until liquefied

  3. Pour the pureed broccoli mixture into a bowl

  4. Add the flour to the pureed broccoli mixture and mix well (no lumps)

  5. Brush oil on a non-stick frying pan on medium heat

  6. Pour ½ cup of the broccoli batter into the pan

  7. Use a spatula to spread out the batter into a thin layer and cook for about 3 minutes. Then carefully flip the wrap and cook for another 2-3 minutes or until the wrap becomes firm but not burned

  8. Fill the wrap with your desired filling and serve immediately
