SPREADABLE CARROT BEAN DIP

This spreadable carrot dip is creamy and full of flavor. 

Serve it as a vegetable dip at your parties, or use as a spread for your bread, cracker or wraps. Spread this creamy dip in your sandwiches instead of mayonnaise. Not only will it give your sandwich great flavor, it will also take your sandwiches to the next level.

You can easily modify this recipe to your own taste…use your favorite herbs or seasonings instead of Mrs. Dash seasoning blend. You can also try different types of beans such as garbanzo or pinto beans. Because of the beans in this recipe, this carrot dip is also high in protein. A great option for vegans or for people who want to incorporate some plant-based eating into their lifestyle.


 

Ingredients:

  • 1 ½ cup carrot coins (~ 1 large carrot)

  • 2 tablespoons water

  • 1 cup canned Cannellini beans (aka white kidney beans)

  • ¼ cup bean liquid from the can

  • 1 tablespoon olive oil

  • 1 teaspoon chopped fresh garlic, (~4 small cloves)

  • 1 teaspoon chili pepper

  • 1 teaspoon Mrs. Dash seasoning blend, original

  • ½ teaspoon kosher salt

  • 1 tablespoon fresh lemon juice (~ ½ medium lemon)

Instructions:

  1. Place the carrots in a microwave safe bowl with 2 tablespoons water

  2. Steam the carrots in the microwave on high for 2 -3 minutes until carrots are soft

  3. Blend all the ingredients in a blender until becomes a paste consistency smooth (~1-2 minutes)

  4. Add the lemon juice and continue to blend until the paste becomes soft and smooth

  5. Serve as a dip or spread
