Citrus Maple Pistachio carrots

Rainbow carrots are nutritious. If you are not used to using rainbow carrots, this recipe is a perfect starter. The recipe is simple and easy to adjust to your own liking. The use of orange juice and maple syrup gives a sweet and tangy flavor. The pistachio nuts add a special savory taste to the dish. All the ingredients are easy to find at any grocery store. You can also easily substitute those ingredients to your liking. No maple syrup? Honey will work beautifully too. Substitute pistachio nuts with any nuts you like such as walnuts, almonds or cashew nuts. If you are allergic to nuts, use sunflower seed instead, or simply skip the nuts and seeds. This dish is not only good for every day meals but is good for special occasions or holidays!


 

Ingredients:

  • 1 pound rainbow carrots

  • 1 tablespoon olive oil

  • 1 large orange zest (~ 1 tablespoon)

  • 1/3 cup orange juice (~ 1 large orange)

  • 2 teaspoons maple syrup

  • ¼ cup pistachio nuts, chopped

  • Salt and pepper to taste

Instructions:

  1. Microwave the rainbow carrots covered with a damp paper towel for 1-2 minutes until slightly soft

  2. Cut the carrots in half lengthwise

  3. Sauté carrots in a nonstick frying pan on medium heat with olive oil for 2-3 minutes until the carrots are semi soft

  4. Add orange juice, maple syrup and pistachio nuts then sauté the carrots for another 2-3 minutes or until the carrots reach the desired tenderness

  5. Add orange zest, salt and pepper to taste

  6. Serve immediately
