orange Carrot Finger Gelatin

Want a healthy snack or a sweet treat that you can eat at any time? This orange-carrot finger gelatin is just that! This recipe is not only a mom approved healthy sweet treat for the kids, it is also a healthy sweet treat for adults!

 You only need 3 ingredients: carrots, orange juice and gelatin. I chose orange juice because the flavor goes very well with carrots. However, be creative and try different types of 100% juices (which means no added-sugar) such as apple, white grape or even no-added sugar fruit nectar beverages. Even though I used an ice cube tray, you can use a glass dish or different molds to make your gelatin fun to eat.


 

Ingredients:

  • ½ cup carrot coins, (~ 1 small carrot)

  • 1 tablespoon water

  • 1 ½ cups + ¼ cup orange juice

  • 2 envelopes gelatin

Instructions:

  • Place the carrots in a microwave safe bowl with 1 tablespoon water

  • Steam the carrots in the microwave on high for 2 minutes or until carrots are soft

  • Bloom the gelatin with ¼ cup of orange juice and let it set for 5 minutes

  • Blend softened carrots with 1 ½ cups orange juice in a blender until smooth

  • Heat up the orange-carrot juice in a sauce pan until the orange-carrot juice becomes very warm with bubbles but not boiled. Turn the stove off at this point

  • Mix the gelatin with the orange-carrot juice until the juice becomes smooth

  • Divide the juice evenly into a greased silicon ice cube tray

  • Place the ice cube tray in the refrigerator for 3 hours

  • Serve immediately
