Cauliflower Chicken Fried Rice


 
 

Prep Time: 10min // Cook Time: 5 min // Total: 15 min // Serving: 6 servings (1/2 cup per serving) 


Ingredients:

  • 3 cups cauliflower rice

  • 2 cups Stir Fry Vegetable Mix

  • 1 tablespoon regular or dark soy sauce

  • 1 cup diced roasted chicken

  • 2 tablespoons green onions, chopped

  • 1 tablespoon vegetable oil or sesame oil

  • 1 teaspoon crushed garlic

Variation:

  1. Vegan style: replace chicken with edamame, tofu, chickpeas, or other beans for protein.

  2. Use other vegetables according to your preference

Instructions:

  1. Rinse cauliflower rice under cold water for 30 seconds, pat dry

  2. Heat fry pan with oil and garlic until hot

  3. Sautee cauliflower rice with ½ tablespoon soy sauce for 2 minutes until water evaporates

  4. Add the vegetables, diced cooked chicken, and soy sauce. Continue to stir fry for another 1-2 minutes

  5. Turn off the heat

  6. Add the green onions on top before serving
