Cauliflower Chicken Fried Rice

Ingredients:
3 cups cauliflower rice
2 cups Stir Fry Vegetable Mix
1 tablespoon regular or dark soy sauce
1 cup diced roasted chicken
2 tablespoons green onions, chopped
1 tablespoon vegetable oil or sesame oil
1 teaspoon crushed garlic
Variation:
Vegan style: replace chicken with edamame, tofu, chickpeas, or other beans for protein.
Use other vegetables according to your preference
Instructions:
Rinse cauliflower rice under cold water for 30 seconds, pat dry
Heat fry pan with oil and garlic until hot
Sautee cauliflower rice with ½ tablespoon soy sauce for 2 minutes until water evaporates
Add the vegetables, diced cooked chicken, and soy sauce. Continue to stir fry for another 1-2 minutes
Turn off the heat
Add the green onions on top before serving
