Oven Fried Chicken Fingers

Ingredients:

  • ¾ cup panko bread crumbs

  • 1 can, 12.5 oz fully cooked canned chicken breast, drain the liquid

  • 1 tablespoon Dijon mustard

  • 2 teaspoons seasoning blend, Trader Joe 21 Seasoning Salute

  • 2 tablespoons all-purpose flour

  • 1 egg, beaten

  • Oil spray for baking

Variations:

  • Instead of the seasoning blend, use different seasoning powders of your choice

  • Replace Dijon mustard with different spicy sauces if desired

Instructions:

  1. Pre-heat oven to 400 degrees

  2. Place an empty baking sheet in oven while preparing chicken fingers

  3. Toast the panko bread crumbs in a frying pan on the stove until lightly brown

  4. Place the toasted panko bread crumbs in a dish and let it cool

  5. Mix the drained canned chicken, Dijon mustard, seasoning blend powder, flour and egg in a bowl

  6. Put one tablespoon of chicken mixture into the palm of your hand and form into a 3-inch long chicken strip

  7. Coat the entire chicken strip with panko bread crumbs

  8. Repeat steps #6 and 7 until all chicken strips are made and ready to bake

  9. Take out the oven-heated baking sheet and coat with oil spray

  10. Place the chicken strips onto heated baking sheet

  11. Spray the top of the chicken fingers with oil spray

  12. Bake at 400 degrees for 8 minutes then flip the chicken fingers and bake for another 6 minutes

  13. Serve with dipping sauce of your choice
