coconut Ribs

Do you like eating ribs but don’t necessary want to use a BBQ grill? If so, you will like my coconut rib recipe! These coconut ribs are oven baked, easy to make, flavorful, moist, and tender. I do recommend to marinate the ribs overnight. This allows all the flavors to infuse into the ribs. Marinating the ribs overnight helps make the meat tender and moist.  Save the marinade to use later on the ribs. To be time efficient, while baking the ribs, work on thickening the marinade on the stove. Add balsamic vinegar and reduce the marinate by 50% of its original volume. The balsamic vinegar adds extra flavor. Brush the thickened sauce on to the ribs 10-15 minutes before the ribs are completely cooked. Then increase the oven temperature to 400 degrees and finish baking the ribs. These ribs are so tender, juicy and flavorful. You will love them as an appetizer or a meal.


 

Ingredients:

  • 1 can coconut milk (14 oz), unsweetened

  • ¼ cup soy sauce

  • ½ cup hoisin sauce

  • ½ teaspoon sesame oil

  • 2 tablespoons grated ginger, fresh

  • 3 Lbs pork lion ribs

  • 2 tablespoons balsamic vinegar

Instructions:

  1. Combine coconut milk, soy sauce, hoisin sauce sesame oil and ginger in a bowl and mix well to make coconut marinade

  2. Cut the rack of ribs in half and remove the membrane

  3. Place the ribs in a zip lock bag

  4. Pour the coconut milk marinade over the ribs and seal the bag.

  5. Refrigerate the ribs overnight

  6. Preheat the oven at 350 degrees

  7. Take the ribs out from the refrigerator and place them on a baking rack on a foiled lined baking sheet.  Save the marinade

  8. Allow the ribs to reach room temperature while the oven preheats before baking

  9. While baking the ribs, reduce the coconut milk marinade on the stove on medium low heat until its volume is reduced by 50%

  10. Bake the ribs in the oven for 45 minutes then take the ribs out and brush the ribs with the thickened sauce

  11. Turn up the oven temperature to 400 degrees and bake the ribs for another 10 minutes or until the eternal temperature reaches 165 degrees

  12. Cut the ribs into individual pieces and serve
