Edamame Egg Bites

Ingredients:

  • ½ cup frozen shelled edamame, finely chopped

  • 6 tablespoons green onions, chopped

  • 2 eggs

  • 6 tablespoons water

  • ¼ teaspoon salt

  • 1/8 teaspoon white pepper, ground

  • 1 teaspoon Mrs. Dash original seasoning blend

Instructions:

  1. Pre-heat oven to 350 degrees

  2. Cover edamame with water in a bowl then microwave until edamame beans are soft

  3. Chop edamame into small pieces

  4. Mix chopped edamame and green onions together

  5. Beat the eggs with 6 tablespoons of water to form an egg batter

  6. Mix salt, white pepper and Mrs. Dash in the egg batter

  7. Combine the edamame and green onion into the egg batter

  8. Divide the edamame egg mixture evenly into six nonstick muffin cups

  9. Bake at 350 degrees for 12 minutes
