Edamame Guacamole


 
 

Prep Time: 10 min // Cook Time: 5 min // Total: 15 min // Serving: 1 1/4 cups


Ingredients:

  • 1 cup frozen edamame, shelled

  • 3 tablespoons water

  • ½ medium ripe avocado, peeled and pitted

  • 3 cloves garlic, peeled

  • 2 tablespoons lemon juice (~ ½ lemon)

  • 2 tablespoons olive oil

  • 2 tablespoon fresh basil, chopped

  • ¼ teaspoon salt

  • 6 tablespoons water

  • Black pepper to taste

Instructions:

1.     Place the edamame with ¼ cup of water in a bowl

2.     Microwave the edamame in a bowl for 5 minutes or until soft

3.     Drain the water from the bowl

4.     Place edamame, avocado, olive oil, garlic, basil, salt, water and pepper in a blender

5.     Blend all the ingredients together until smooth consistency

6.     Serve as a dip or sandwich spread
