Egg-Free Banana Orange Muffins

If you ever wonder if making muffins without eggs is possible, the answer is yes! Based on the research, I use ¼ cup of mashed banana as a substitution for every egg. Because the natural sweetness from the ripe banana and 100% orange juice, the required additional sugar is minimal. Even though these muffins contain no eggs, and no dairy, they are still soft, moist and most importantly, delicious. I wouldn’t be surprised if they become your go to muffins after you give the recipe a try.
Ingredients:
1 ¼ cups mashed bananas (~ 3 medium bananas)
1 cup orange juice
1 ¾ teaspoons vanilla extract
1 ¾ tablespoons refined coconut oil
1 cup rolled oats
3 tablespoons granulated sugar
¼ teaspoon kosher salt
1 teaspoon baking soda
1 teaspoon baking powder
1 ¾ cups whole wheat flour
Instructions:
1. Preheat oven to 350 F.
2. Mash bananas until smooth
3. Combine mashed bananas, orange juice, vanilla extract and coconut oil in a bowl and mix well
4. Add the rolled oats to the mashed banana orange juice mixture and mix well
5. Add salt, baking soda and baking powder to the mixture and mix well
6. Fold in the whole wheat flour until it becomes a smooth batter (do not over mix)
7. Spoon the batter into muffin cups until ¾ full
8. Bake for 13 minutes or until a toothpick inserted in the center comes out clean
9. Let it cool for 5 minutes before eating
