Do you like homemade biscuits but don’t have the time to make them? If so, give my bacon kale biscuits recipe a try. There is no kneading or cutting involved, and you can make them in less than 30 minutes. The texture of these biscuits is similar to drop biscuits. This recipe is versatile as well. Add any type of cheese, herbs or spices you prefer. Since turkey bacon is used instead of regular bacon and reduced fat buttermilk replaced the regular buttermilk, these biscuits are actually healthy. Because they are so simple and easy to make, you can have them for breakfast, snack or as a side dish.


 

Ingredients:

  • 1 cup finely chopped kale

  • ¼ teaspoon vegetable oil

  • 2 slices turkey bacon, chopped

  • 2 ¼ cups all-purpose flour

  • 2 teaspoons baking powder

  • ½ teaspoon baking soda

  • 1 teaspoon garlic powder

  • ½ teaspoon salt

  • ½ cup blended cheese

  • 1 cup 1.5% reduced fat buttermilk

  • 1 tablespoon melted butter

Instructions:

  1. Preheat oven to 375 degrees

  2. Massage chopped kale in a small bowl with the vegetable oil for about 1 minute

  3. Sautee turkey bacon in a nonstick frying pan with kale until bacon is cooked and the kale is softened

  4. Place the sauteed turkey bacon and kale on a plate and set aside to let cool

  5. Combine flour, baking powder, baking soda, salt, garlic powder, cheese and cooked bacon and kale in a mixing bowl

  6. Add buttermilk

  7. Mix all ingredients well in a bowl and form a dough

  8. Use a ¼ cup measuring cup to portion dough on a lined (with either a silicon mat or parchment paper) baking sheet

  9. Brush melted butter on top of each biscuit dough

  10. Bake for 13 minutes

  11. Serve immediately
