Hawaiiam Mushroom Sloppy Joe

I am trying to incorporate more plant-based meals into my diet. One of my strategies I use is to decrease the amount of animal protein and increase the amounts of vegetables in my entrees. I think of it as another option to transition into a plant-based eating lifestyle. So, I am happy I did just that with my Hawaiian mushroom sloppy Joe recipe! I know many times when people see Asian recipes, they automatically think high salt. However, my Hawaiian Sloppy Joe is sodium friendly. It has less than 500 mg of sodium per ¾ cup of the sloppy joe mixture, and it is full of sweet, tangy and savory flavors. The key to make this Asian flavor sloppy joe is to use small amount of soy sauce and add lots of sodium-free flavors such as pineapple juice, fresh ginger, garlic and rice vinegar. This sloppy joe recipe is easy and fast to make. Best of all, it is delicious and flavorful! Just one warning though, it is definitely sloppy to eat, but you know what they say, “if it is not sloppy, it is not sloppy Joe”, ha ha.
Ingredients:
8 oz 93% lean ground beef8 oz brown Bella mushrooms (~ 10 medium size mushrooms)
2 ½ Teaspoons regular soy sauce
7 Tablespoons 100% pineapple juice, separate (from the canned pineapple tidbits) to be used as topping
1 ½ Teaspoons granulated sugar
2 Teaspoons finely chopped garlic
2 Teaspoons grated ginger
2 ½ Teaspoons rice vinegar, divided
1 Tablespoon corn starch slurry
¼ cup chopped green onions
8 oz canned pineapple tidbits, packed with 100% juice (save the juice to be used for the step #4
Instructions:
Chop cleaned mushrooms into very small pieces (ground meat like texture)
Mix ground beef and chopped mushrooms in a bowl
Combine soy sauce, 5 tablespoons of 100 % pineapple juice, sugar, garlic, ginger and 1 ½ teaspoons rice vinegar in a separate bowl
Cook the ground meat/mushroom sloppy joe mix in a non-stick frying pan on medium high heat until the meat is browned
Add the Hawaiian teriyaki sauce to the pan and continue to cook
Add the corn starchy slurry
Turn off the stove after the sloppy joe mixture becomes thick
Add the remaining 1 teaspoon of rice vinegar and 2 tablespoons of the remaining pineapple juice to the meat mixture with ¼ cup of green onions
Place ¾ cup of the sloppy mixture to one toasted sesame seed bun
Top with pineapple tidbits
Serve immediately
