The recipe uses semi-ripe bananas slices that are coated with cinnamon powder then pan fried on the stove. The caramelized bananas provide a buttery sweetness with a toasty flavor that you would not get from regular bananas.

Tahini binds the banana and oats together, and makes these bars nut-allergy friendly. However, any nut-butter can be used instead of tahini for extra protein if desired. These banana oatmeal bars are definitely a delicious option for those who are seeking for nut-free snacks.



 

Ingredients:

  • 1 ¾ cups rolled oats

  • 2 small ripe bananas, sliced

  • 1 ½ teaspoons ground cinnamon, divided

  • ½ teaspoon oil

  • ½ cup tahini

  • Pinch of salt

 

Instructions:

1.     Toast rolled oats in a pan on medium high heat until they turn golden brown

2.     Coat banana slices with 1 teaspoon cinnamon

3.     On a stove, pan fry the cinnamon banana slices on medium high heat until banana slices are caramelized

4.     Remove the caramelized banana slices from the stove and mash them with a fork in a bowl and let it cool

5.     Mix tahini with the cooled mashed bananas until smooth

6.     Add the toasted rolled oats to the tahini banana mixture and add another ½ teaspoon cinnamon and pinch of salt. Mix thoroughly

7.     Spread the banana oat mixture evenly in a parchment lined dish and press firmly

8.     Let it set at the room temperature for 20 minutes until it becomes firm

9.     Cut and serve
