This recipe is so versatile that you can modify it easily to your own taste and liking. Substitute any type of cucumbers you like or available if Persian cucumbers are not for you. The purpose of cucumbers here is to add crunchiness in your salad, so any vegetable provides that crunchy texture will work perfectly in this recipe. You can also add different vegetables and fruits such as lettuce, tomatoes, or apples.

The main dressing component is rice vinegar along with orange zest, sugar and salt. No fats such as oil or mayonnaise is needed. This is the reason why this peach cucumber salad is so refreshing and light. It is definitely a great side dish to serve any time.

 


 

Ingredients:

Salad Mix

  • 2 tablespoons sesame seeds

  • 2 small peaches, chopped (~2 cups)

  • 3 Persian cucumbers, sliced into ½ circular shape (~3 cups)

  • ½ orange, chopped (~ ½  cup)

Dressing

  • 2 tablespoons rice vinegar

  • 1 ½ teaspoons granulated sugar

  •  1 teaspoon orange zest (~ ½ orange)

  •  2 tablespoons fresh orange juice (~ ½ orange)

  •  Pinch of salt

Instructions:

  1. Toast sesame seeds in a nonstick frying pan on med heat until sesame seeds turned golden brown, set it aside to let them cool

  2. Place chopped peaches, cucumber and oranges on a plate

  3. Mix rice vinegar, sugar, orange zest, orange juice and salt in a large bowl. Make sure the sugar is thoroughly dissolved in the rice vinegar mixture

  4. Mix the chopped peaches, cucumbers and oranges with the vinaigrette dressing bowl

  5. Sprinkle the toasted sesame seeds on the salad bowl

  6. Serve immediately
