We all know peaches are great in bake goods, and they are popular for making peach muffins. The concept of muffins inspired me to create this peach filled oatmeal cup recipe. This recipe is hearty with peach filling inside, and is a great grab-and-go type of breakfast or snack item.

The main ingredients are peaches, rolled oats, and whole wheat flour. Each oatmeal cup provides 4 grams of fiber which is not bad since bake goods usually don’t contain much fiber. The ripeness and sweetness of the peaches determine the amount of added sugar needed when making the peach sauce. Therefore, adjusting the amount of added sugar according to the ripeness of the peaches is key to the success when making the peach filling. You can definitely use canned peaches and adjust the amount of sweetener accordingly. However, the peach taste and flavor may not be as strong as using the fresh peaches. You may want to use fresh peaches when they are available, and substitute canned peaches as appropriate.

This recipe calls for two types of sugar: granulated sugar to bring out the peach flavor in the peach filling and brown sugar in the oatmeal cups to give a more molasses flavor. It is perfectly fine to just use one type of sugar to cut down the number of ingredients if you wish.  

These peach-filled oatmeal cups are so delicious and easy to make, you will want to make them for yourself, family and friends over and over again.


 

Ingredients:

Peach Filling

  •  2 medium peaches, sliced (~ 1 cup)

  •  2 teaspoons granulated sugar

  • 1 tablespoon fresh lemon juice

 Oatmeal Cups        

  • 1 cup rolled oats

  • ½ cup whole wheat flour

  • 3 tablespoons brown (or granulated sugar)

  • 1 teaspoon ground cinnamon

  • ½ teaspoon baking soda

  • 1 cup soy milk

  • 2 tablespoons salted sweet butter, melted

Instructions:

Peach filling:  

  1. Peel and slice peaches

  2. Place sliced peaches, sugar and lemon juice in a non-stick frying pan on medium heat and cook the peaches until the liquid evaporates and the peaches are fork tender. Stir occasionally to prevent peaches from burning

  3. Mash the peaches into jam consistency with a spoon inside the pan or a masher in a bowl (makes ~1/2 cup peach filling)

  4. Set aside to let it cool

Oatmeal Bites

  1. Preheat oven to 350 degrees

  2. Combine rolled oats, flour, cinnamon and baking soda in a bowl

  3. Add milk and the melted butter to the dry ingredients and mix well

  4. Let the batter sit for 2 minutes

  5. Place a heaping tablespoon of the oatmeal mixture (1 tablespoon + 1 teaspoon) into the bottom of each cup of a greased 6-cup muffin pan

  6. Press the oatmeal mixture around the muffin to form a shallow well in the middle

  7. Place 1 ½ teaspoons of peach filling in the center of the oatmeal mixture

  8. Place another heaping tablespoon oatmeal mixture on top of the peach filling and press down the mixture gently

  9. Bake at 350 degrees for 13 minutes

  10. Take the oatmeal cups immediately out from the muffin pan after they are fully baked and place onto a wire rack

  11. Let the peach filled oatmeal bites cool for 5 minutes before eating
