Pumpkin CHocolate Bites

Prep Time: 15 min // Cook Time: 60 min(chilling time) // Total: 35 min // Serving: 14 bites

 

Ingredients:

  • 1 cup pureed pumpkin (not pie filling)

  • 1 cup Quaker Oats, toasted

  • 8 squares honey Graham Crackers, pulse to bread crumb consistency

  • ¼ teaspoon nutmeg

  • ¼ teaspoon cinnamon

  • ¼ teaspoon vanilla extract

  • 1/8 teaspoon ground ginger

  • 1 cup melted chocolate

 
 

Instructions:

  1. Pat dry the pureed pumpkin with paper towel to soak up the moisture

  2. Toast the Quaker Oats on a stove top with medium high heat until they are brown

  3. Chop honey graham crackers to the bread crumb consistency

  4. Chop toasted Quaker oats to smaller size

  5. Mix pumpkin puree, toasted oats, graham cracker crumb, nutmeg, cinnamon vanilla extract    and ground ginger together in a bowl

  6. Line baking sheet with parchment paper

  7. Fill the mixture with 1 ½ Tablespoon scoop and place on a baking sheet OR

  8. Roll 1 ½ tablespoon of pumpkin mixture into balls and place them on a baking sheet/plate

  9. Melt chocolates (~ 9 squares) either on stove or in microwave

  10. Cover the pumpkin bites with melted chocolate

  11. Refrigerate for at least one hour before serving
