Foil Wrapped ginger Soy Sauce Chicken

My foil wrapped chicken with ginger soy sauce recipe is light and flavorful and another great way to use up your leftover rotisserie chicken.

The flavor of this recipe is inspired by one of my favorite Chinese dishes, steamed fish. It is a whole fish or fish filet dish that has been steamed with sesame oil, soy sauce, ginger and topped with green onions and/or cilantro. The fish is soft, moist and full of the gingery flavor, a simple light, and flavorful dish. I wanted that light and flavorful taste using rotisserie chicken. To mimic that flavor, I diluted my soy sauce with water to prevent the rotisserie chicken from becoming too salty. Even though my recipe calls for canned broken straw mushrooms, regular canned sliced mushrooms will work too.  I think cilantro alone gives that special flavor I am looking for. If you do not own a steamer or steamer basket, use a metal colander instead. Place your colander on top of a pie pan or on a plate to prevent the water from going inside your foil wrapped chicken when steaming. I tried to use a colander myself so I know this method works just as well. There is absolutely no need to go out to buy steaming equipment just for this recipe. The chicken is so tender, moist and flavorful when served immediately after steaming. A must try recipe whenever you want something light and flavorful.

 


 

Ingredients:

  • 9 thin chicken slices (approximately 2 ½“ long  x 1“ wide  x ¼“ thick)

  • 3 tablespoons canned broken straw mushrooms

  • 2 tablespoons chopped cilantro

  • 9 pieces of aluminum foil, 5”x5”

  • 1 ½ cups water (for steaming)

Ginger Soy Sauce:

  • 2 tablespoons soy sauce

  • 1 ½ tablespoons water

  • ½ tablespoon sesame oil

  • 1 tablespoon finely chopped fresh ginger

  • ½ tablespoon chopped garlic

  • ¼ teaspoon sugar

Instructions:

  1. Combine the ginger soy sauce ingredients together in a bowl and mix well

  2. Place a 5”x 5” aluminum foil diagonally on the counter

  3. Place one slice of chicken in the center of upper half of a 5”x 5” aluminum foil

  4. Place 1-2 piece of broken mushroom on top of the chicken meat

  5. Place a few of pieces of chopped cilantro on top of the mushrooms

  6. Pour 1 ½ teaspoons of ginger sauce on top of mushroom and chicken

  7. Wrap the above items inside the aluminum foil (triangle shape)

  8. Fold the bottom corner of the aluminum foil up from one end to another to form a triangle shape

  9. Fold the left and right sides of the foil triangle inward to ensure the chicken and the sauce are sealed tightly inside the aluminum foil pouch.

  10. Fold the bottom corners of foil inward to ensure the corners are tightly sealed.

  11. Pour 1 ½ cups of water inside a pot

  12. Place all foil wrapped chicken inside a steamer basket

  13. Place the steamer basket inside the pot and cover with lid and steam for 5 minutes

  14. Serve immediately
