Spicy Sweet Potato cups


 
 

Prep Time: 35 min // Cook Time: 7 min // Total: 42 min // Serving: 15 cups


Ingredients:

  • 1 pound sweet potato

  • ¼ cup panko bread crumb

  • 1 tablespoon soy sauce

  • 1 tablespoon sesame oil

  • ½ tablespoon sriracha sauce

  • ½ teaspoon white pepper

  • 1 teaspoon chopped garlic

  • 1/3 cup chopped green onion

  • 15 won ton wrappers, thin style

Instructions:

  1. Preheat oven to 350 degrees

  2. Peel sweet potato

  3. Cut sweet potato into 4-5 large pieces

  4. Boil sweet potato in a pot with water until soft

  5. Toast panko in a pan on the stove until it becomes light brown (while boiling the sweet potato)

  6. Drain the water when sweet potato becomes soft

  7. Mash the sweet potato with a masher or large spoon

  8. Add soy sauce, sesame oil, sriracha sauce, white pepper and garlic into the mashed sweet potato and mix well. Add green onions into the mashed sweet potato mixture.

  9. Place one won ton skin into one small muffin pan to form a won ton cup

  10. Spray the won ton cups with oil spray

  11. Place 1/2 tablespoon of the mashed sweet potato mixture into each won ton cup

  12. Place 1 teaspoon of panko bread crumb on the top of each sweet potato wonton cup

  13. Bake at 350 degrees for 7 minutes
