Smooth Sweet potato Soup
Prep Time: 10 min // Cook Time: 40 min // Total: 50 min // Serving: 8 (1 cup per serving)
Ingredients:
1 pound sweet potato, diced
1 cup yellow onions, chopped
1 cup celery, chopped
1 can garbanzo beans, 15 ounces
2 tablespoon olive oil
2 tablespoon garlic, chopped
1 teaspoon sage, ground
1 teaspoon thyme, ground
5 ½ cups chicken broth,
1 tablespoon fresh lime juice (~ ½ lime)
Variations:
Vegan: replace chicken broth with vegetable broth
Instructions:
1. Peel and dice the sweet potato
2. Sauté sweet, onion and celery with 1 tablespoon olive oil and 1 tablespoon garlic in a pan for 5 minutes
3. Add 1/3 cup chicken broth and simmer for 15 minutes or until sweet potato becomes soft
4. Add garbanzo beans to the pan and sauté with additional 1 tablespoon olive oil, 1 tablespoon garlic, 1 teaspoon sage, 1 teaspoon thyme, and salt
5. Add 1/3 cup chicken broth and continue to sauté the sweet potato and garbanzo beans mixture
6. Add 1/3 cup additional chicken broth and simmer until everything becomes soft
7. Place the sweet potato mixture into a blender. Divide into batches if needed
8. Add 4 ½ cups of broth and the lime juice into the blender
9. Blend until smooth consistency
