If you want a quick bread that tastes like a cake, you must try my chocolate zucchini bread. This chocolate zucchini bread tastes like a moist and soft cake because I steam the bread on the stove instead of baking it in the oven. This bread is low fat. I discovered that by using whole milk plain yogurt, you can get a moist and richness texture without adding oil or butter. Zucchini has high water content; therefore, it is important to squeeze out the water to avoid the bread becoming too soggy when steaming. Since the bread is soft and moist, you can eat it as dessert too!
Ingredients:
Wet Ingredients:
2 eggs
1 cup whole milk plain yogurt
1 teaspoon vanilla extract
Dry Indigents:
1 ½ cups whole wheat flour
2/3 cup brown sugar
1 teaspoon ground cinnamon
¼ cup cocoa powder
¼ teaspoon kosher salt
1 teaspoon baking soda
1 teaspoon baking powder
1 1/3 cup grated zucchini, raw with skin (about 1 large or 2 small zucchini)
6 cups water for steaming
Instructions:
Mix all wet ingredients in a bowl
Mix all dry ingredients in a separate bowl
Mix wet ingredients to dry ingredients, do not mix for more than one minute to avoid over mixing
Finely grate zucchini with skin on
Place the grated zucchini inside a clean towel then squeeze the zucchini with a hand to force the water out
Add grated zucchini to the batter and mix well, make sure there are no lumps.
Grease a 9 x 5 loaf pan
Place the batter into the greased loaf pan
Pour six cups water in a frying pan, and bring water to a simmer
Place the loaf pan inside the frying pan and cover with lid
Steam the bread on medium heat for 40 minutes or until an inserted toothpick comes out clean from the center of the bread
Let the bread cool before serving
