Zucchini Crust Pizza

When we think about pizza, we think about oven baked pizza. What if you want to eat pizza but don’t want to turn on your oven? How about trying my pan fried zucchini crust pizza?  The recipe makes a personal size pizza, which is a great for singles; it is also great for snacks and as an appetizer.

The “pizza crust” is made from the grated zucchini, whole wheat flour, Romano cheese and egg. However, you can substitute the whole wheat flour with all-purpose flour or other types of flours. You can also use parmigiana cheese instead of Romano cheese. No need to add additional salt to the crust mixture since the cheese gives plenty of saltiness. You can make it into different flavors by adding dried herbs or spices. I kept my recipe simple. I only used jarred pasta sauce, mushrooms and turkey bacon, but you can top the pizza with anything you like, the sky is the limit.


 

Ingredients:

Pizza crust :

  • 1 cup grated zucchini

  • 1/3 cup whole wheat flour

  • 2 tablespoons shredded Romano cheese

  • ¼ teaspoon crushed red pepper flakes

  • 1 egg, beaten

Pizza toppings:

  • ¼ cup spaghetti sauce

  • 1/3 cup Mozzarella cheese

  • 1/4 cup sliced button mushrooms

  • 2 slices turkey bacon, sliced

For pan frying

  • 1 tablespoon olive oil

Instructions:

  1. Pan fry sliced turkey bacon in a frying pan until the bacon becomes brown and crispy

  2. Grate one cup zucchini using the large hole size panel of a box grater

  3. Place grated zucchini in a clean dish towel then twist the towel squeezing the water out

  4. Mix the zucchini, whole wheat flour, Romano cheese and red pepper flakes in a bowl and mix thoroughly. Make sure there are no lumps

  5. Add the egg to the zucchini mixture and mix well to form a dough

  6. Add olive oil to a nonstick frying pan on the stove then heat the pan on medium heat

  7. Form the zucchini dough into a patty by hand and place the zucchini patty in the frying pan

  8. Grease the spatula with the heated oil inside the pan

  9. Spread the patty outward carefully with the spatula to form a 7 inch circular shape

  10. Pan fry the dough until the bottom crust turns light brown and firm

  11. Flip the dough and turn the stove to medium low

  12. Spread the marinara sauce evenly on top of the zucchini dough

  13. Place a layer of mozzarella cheese, then top with the mushrooms and browned turkey bacon

  14. Cover with a lid and turn up the heat to medium until cheese melted

  15. Place the pizza on a cutting board and cut into pieces

  16. Serve immediately
