Did you know that cauliflower is:

·      Available in 4 different colors: white, orange, purple and green? So, venture out and try different colors!

·      High in fiber and anti-oxidants such as carotenoid and flavonoid and Choline (for healthy cells and brain development)? It is a superfood

·      High in vitamins C, K, B6 (pyridoxine) and potassium? Good for the immune system, blood coagulation, body metabolism and muscle contraction!

Naturally low in calories and sodium? Beneficial to weight and blood pressure management!


Cauliflower has a firm texture and a mild flavor on its own.  Therefore, it takes on different flavors easily. There are many ways to eat cauliflower: roasted, stir fried, steamed, raw, or in soups. 

With its firm texture and ability to take on different flavors, cauliflower has becoming a popular low carbohydrate food substitute. Like many people, I am curious and interested to see what I can do with cauliflower other than eating it as a regular vegetable. 

So, here are my three recipe creations: cauliflower chicken fried rice, cauliflower hash browns, and spicy teriyaki cauliflower nuggets.  To save time, I like to use prepackaged cauliflower florets. However, you can use a whole cauliflower to make your own cauliflower florets and cauliflower rice. 

My cauliflower chicken fried rice can be made as a vegan dish by skipping the meat and adding tofu and  edamame instead. The cauliflower hash brown recipe is easy to make with only five ingredients. Adding a fried egg on top makes this hash brown a quick delicious meal. How about making and eating those cauliflower florets nuggets as an appetizer or snack?  To make the nuggets crunchy outside, toasting the panko breadcrumb is a must, so don’t skip this step.
